Pomegranate Granita
Pleasantly tangy and extremely refreshing, pomegranate juice is a great starting point for beverages and desserts. If you can’t find pomegranate juice in the stores, you can easily make your own with a citrus juicer. This recipe doesn’t call for sugar, but don’t worry, grenadine syrup is plenty sweet.

| 4 cups pomegranate juice |
|
A few drops rose essence (optional) |
| 1/3 cup grenadine (pomegranate syrup) |
|
1/2 cup pomegranate seeds for garnish |
| 2-3 tablespoons freshly squeezed lemon juice |
|

| 1-2 tablespoons pomegranate concentrate (optional) |
|
|
1) Whisk all the ingredients together except the pomegranate seeds. This mixture will be both acidic and very sweet but will lose some of its sweetness when frozen.
2) Pour into a large shallow tray, cover and put in the freezer for 2 hours, stirring occasionally. Freeze until firm, 8 to 24 hours.
3) When ready to serve, scrape the granita with a fork to create crumble texture, put in glasses or bowls and top with pomegranate seeds.
